Racines

A native of Italy, Simone Tondo is passionate about fresh pasta and the finest cured meats, as he demonstrates at the Racines restaurant in the Passage des Panoramas. With an open kitchen in front of them, dinners take place by candlelight, and guests share—haphazardly—vitello tonnato, a plump Apulian burrata, or tagliatelle with beef ragù. The menu blends recipes from his grandmother Marisa with a selection of Parisian bistro classics given a modern twist.
