Rosetta
Rosetta, a refined bistro located in the Colonia Roma neighborhood, began by hosting “underground” dinners before officially becoming Chef Elena Reygadas’s restaurant. Deeply attuned to the culture of the campesignos (villagers), which is still very much alive in Mexico, the chef draws inspiration from this ancient tradition, reinterpreting it in innovative ways. Examples include the ways in which she transforms local fruits into various sorbets and her reinterpretation of tamales (a typical Mesoamerican dish) with smoked butter.
