Clamato

Just a stone’s throw from its elder sibling Septime, Clamato goes with the tides and the day’s catch. Saint-Jean-de-Luz, Concarneau, the Île d’Yeu: here, the sea sets the pace, and the food follows suit. Shellfish and crustaceans arrive almost unadorned, in their purest form — Belle de Corde oyster from Quiberon, brown crab, sea urchin — before being shaken up by freer, more inventive cooking: black mullet and butternut squash ceviche, bonito tataki, Buddha’s hand, and tamarind condiment.
