The madeleines from La Madeleine de Proust
This company is based in a small village in the Eure-et-Loire department and has made madeleines (unsurprisingly, given that they originated in the region) its specialty. Here, they come in several flavors (vanilla, lemon, or chocolate) and are made entirely by hand. This is the vision of Maxime Beucher, the creator, who cut her teeth working alongside Alain Passard.
