Vintage benches and light fixtures, wine racks, and a wooden counter: it’s in a setting that’s almost a cliché of a Parisian bistro that Thomas Brachet showcases simple, flavorful French cuisine. Topping the menu is the now-famous sausage and mashed potatoes, accompanied, among other things, by fine wines selected by Tristan Renoux (with no fewer than 250 bottles).
