“All Kobe beef is Wagyu. But not all Wagyu is Kobe beef”: this statement introduces us to the highly distinctive world of Ca’ Negra, a producer based near Venice in Northern Italy. Here, the Wagyu cattle are purebred, allowing the meat to retain all its flavors. To ensure they offer high-quality products, the producers check the BMS (Beef Marbling Score), which provides an at-a-glance rating from 1 to 12 of the marbling in each cut, an indicator of the high fat content prized for its flavor.
