Here, tuna takes center stage. It is mainly caught in the Mediterranean Sea by local experts using techniques that protect marine biodiversity. After being caught, the tuna is cooked in a broth of lemon, thyme, bay leaf, rosemary, and white vinegar. The result: tender, juicy flesh used in a variety of offerings, from grilled tuna to tuna belly preserved in olive oil in a jar.
