At this bakery in Lille, transparency is the order of the day. So much so that the full list of ingredients used to make the bread is disclosed on its website. These include: locally produced flours, guaranteed pesticide-free, Noirmoutier salt, seeds and dried fruit (also guaranteed pesticide-free), water filtered through activated charcoal, and Zadaar, the bakery’s natural sourdough starter used to ferment all its breads.
